Herb and olive oil bread

Cooking time : 40 minutes

 

Ingredients

  • 500g of soft 450 flour
  • 10g of baker’s yeast
  • 1 teaspoon of sugar
  • 2 teaspoons of salt
  • 25cl of water
  • 5cl of olive oil
  • 3 tablespoons of mixed herbs

 

Instructions

  1. Mix the sugar with lukewarm water in a bowl. Add the yeast and leave to stand for 10 minutes.
  2. Put the flour into a large bowl and make a well in the centre.
  3. Pour in the water-yeast mixture, the oil and the herbs, knead for 10 minutes.
    Add the salt and continue to knead.
    Cover with a tea-towel and leave this to rise for 1 hour.
  4. Quickly knead one last time then separate in half, shape into 2 balls on an ovenproof tray.
    Leave them to rise for a further 30 minutes, then slash the tops.
  5. Bake in a hot oven for 40 minutes, with a roasting tin of water in the bottom of the oven.
