Herb and olive oil bread

2 breads

Rise : 1h30
Cooking time : 40 minutes
Ingredients
- 500g of soft 450 flour
- 10g of baker’s yeast
- 1 teaspoon of sugar
- 2 teaspoons of salt
- 25cl of water
- 5cl of olive oil
- 3 tablespoons of mixed herbs
Instructions
- Mix the sugar with lukewarm water in a bowl. Add the yeast and leave to stand for 10 minutes.
- Put the flour into a large bowl and make a well in the centre.
- Pour in the water-yeast mixture, the oil and the herbs, knead for 10 minutes.
Add the salt and continue to knead.
Cover with a tea-towel and leave this to rise for 1 hour. - Quickly knead one last time then separate in half, shape into 2 balls on an ovenproof tray.
Leave them to rise for a further 30 minutes, then slash the tops. - Bake in a hot oven for 40 minutes, with a roasting tin of water in the bottom of the oven.
