Fish Accras

Ingredients
- 400g of white fish
- 2 cloves of garlic
- 1 lime
- 1 onion
- 200g of flour
- 1 measure of baking powder
- 2 eggs
- 1 small chilli pepper or
- 1 teaspoon of Tabasco® sauce
- Salt and pepper
Preparation
- Cook the fish in a court bouillon for 10 minutes. Drain then flake the fish.
- Crush the garlic and grate the onion.
- Finely chop a piece of chilli pepper and parsley, add the lime zest.
Mix these ingredients together and season with salt and pepper. - In another bowl, stir the baking powder into the flour then add the eggs. Continue to mix while adding 10cl of water.
- Now incorporate the fish paste made earlier, stirring carefully.
- Create small balls of the mixture and fry them in hot oil until they are golden brown, or for about 4 minutes.
Drain them on some kitchen paper and serve hot.
