Baked eggs in tomatoes

Ingredients
- 4 large round tomatoes
- 4 fresh eggs
- 10 savoury cheese biscuits
- 4 tablespoons of liquid cream
- 4 teaspoons of parmesan
- Salt and pepper
Preparation
- Preheat the oven on a medium setting.
- Scoop out the insides of the tomatoes.
- Season the inside with salt, turn them over to remove as much of the juice and pulp as possible.
- Crumble the savoury biscuits, spooning 1 teaspoon into the bottom of each tomato.
- Add one tablespoon of liquid cream and place the tomatoes into an oven dish, cook for 5 minutes.
- Break an egg into each of the tomatoes, season with salt and pepper and sprinkle with parmesan.
- Put this back into the oven for 8 minutes, then serve immediately with toasted bread fingers.
