Pad Thai with prawns

Pad Thai with prawns

Ingredients

  • 300g of peeled prawns
  • 250g of Chinese noodles
  • 2 red peppers
  • 1 onion
  • 4 tablespoons of finely chopped coriander
  • 2 tablespoons of soya sauce
  • 4 tablespoons of rapeseed oil
  • 1 teaspoon of Thai curry paste
  • Salt

 

Preparation

  1. Bring a pan of salted water to the boil, add the noodles and cook for 3 minutes.
  2. Drain then separate with a fork.
  3. Thinly slice the peppers and onion.
  4. Pour the oil and the curry paste into a frying pan.
  5. Incorporate the vegetables and cook on a medium heat for 7 minutes.
  6. Add the prawns, the noodles and the soya sauce. Continue cooking for a further 2 minutes on a high heat, stirring well.
  7. Sprinkle with coriander and serve hot.
