Mackerel grilled a la plancha

Ingredients

  • 4 large mackerel
  • 1 red pepper
  • 2 tomatoes
  • 1 courgette
  • 1 onion
  • 1 lemon
  • Olive oil
  • Coarse salt
  • Thyme, rosemary and bay
  • leaves
  • Salt and pepper

Preparation

  1. Preheat the griddle on a medium setting.
  2. Prepare the vegetables; halve the tomatoes, slice the onion and courgette 1cm thick, and cut the pepper into 8 pieces.
  3. Season with salt and pepper and drizzle with some olive oil.
  4. Cook these on the griddle, turning often; the peppers for 11 minutes, the courgette for 7 minutes, the onion for 4 minutes and the tomatoes for 3 minutes.
  5. Place the thyme, rosemary and bay leaf inside the mackerel.
  6. Griddle them on a bed of coarse salt for 7 minutes each side.
  7. Drizzle with lemon juice and serve with the vegetables.
