Mackerel grilled a la plancha

Ingredients
- 4 large mackerel
- 1 red pepper
- 2 tomatoes
- 1 courgette
- 1 onion
- 1 lemon
- Olive oil
- Coarse salt
- Thyme, rosemary and bay
- leaves
- Salt and pepper
Preparation
- Preheat the griddle on a medium setting.
- Prepare the vegetables; halve the tomatoes, slice the onion and courgette 1cm thick, and cut the pepper into 8 pieces.
- Season with salt and pepper and drizzle with some olive oil.
- Cook these on the griddle, turning often; the peppers for 11 minutes, the courgette for 7 minutes, the onion for 4 minutes and the tomatoes for 3 minutes.
- Place the thyme, rosemary and bay leaf inside the mackerel.
- Griddle them on a bed of coarse salt for 7 minutes each side.
- Drizzle with lemon juice and serve with the vegetables.
