Individual trays of griddled mussels

Ingredients
- 1.5kg of cleaned mussels
- 1 carrot
- 2 shallots
- 1 branch of celery or ó a leek
- 1 tablespoon of finely
- chopped parsley
- 20g of butter
- 20cl of white wine
- Pepper
Preparation
- Preheat the griddle on a medium to hot setting.
- Finely chop the shallots, the carrot and celery.
- Put this all into a pan with the butter.
- Pour over the white wine then place the pan onto the griddle and allow it to cook for 5 minutes.
- Divide the mussels between 4 aluminium trays.
Pour over some of the sauce, add a little parsley and then ground pepper. - Put the lids onto the trays, firmly folding the edges, to be as airtight as possible.
- Place the trays onto the griddle and allow them to cook for 8 minutes.
