Fish brandade

Ingredients
- 1kg of potatoes
- 600g of white fish fillets
- 2 shallots, finely chopped
- 2 cloves of garlic
- 15cl of liquid cream
- 10 slices of chorizo, finely chopped
- 4 tablespoons of olive oil
- 5 tablespoons of breadcrumbs
- Salt and pepper
Preparation
- Cook the potatoes, the shallots and the garlic in a pan of boiling, salted water for 20 minutes.
- Reduce the heat and incorporate the fish, continue to cook for 10 minutes.
- Peel the potatoes then crush them into a large dish adding the oil, the cream and the flaked fish. Add the crushed garlic and the chorizo and mix well.
- Season with salt and pepper then top with breadcrumbs.
- Bake in a very hot oven for 10 minutes.
