Fish brandade

Ingredients

  • 1kg of potatoes
  • 600g of white fish fillets
  • 2 shallots, finely chopped
  • 2 cloves of garlic
  • 15cl of liquid cream
  • 10 slices of chorizo, finely chopped
  • 4 tablespoons of olive oil
  • 5 tablespoons of breadcrumbs
  • Salt and pepper

 

Preparation

  1. Cook the potatoes, the shallots and the garlic in a pan of boiling, salted water for 20 minutes.
  2. Reduce the heat and incorporate the fish, continue to cook for 10 minutes.
  3. Peel the potatoes then crush them into a large dish adding the oil, the cream and the flaked fish. Add the crushed garlic and the chorizo and mix well.
  4. Season with salt and pepper then top with breadcrumbs.
  5. Bake in a very hot oven for 10 minutes.
